The Domaine

First and foremost, La CHAPINIÈRE celebrates the remarkable encounter between an exceptional grape variety, SAUVIGNON BLANC, and the geography and climate of the Cher Valley.

Touraine is traversed by an exceptional hydrographic network. Located in the southwest of the Paris Basin, the vineyard spreads across a gently undulating plateau, carved by the valleys of three major rivers: the Cher, the Indre, and the Vienne, all of which converge toward the magical and untamed Loire River.

The vines are peacefully arranged along the valleys.

The vineyard of LA CHAPINIÈRE spans four villages on either side of the Cher River : Noyers-sur-Cher and Châtillon-sur-Cher on the northern right bank, and Couffy and Châteauvieux on the southern left bank.

The emblem of LA CHAPINIÈRE is an acacia leaf. The acacia tree belongs to the large family of legumes, extraordinary plants capable of feeding on nitrogen from the air—the starting point of virtuous agriculture.

Sauvignon Blanc

Sauvignon Blanc is one of France’s oldest grape varieties, cultivated as early as the Gallo-Roman era and extensively described by Gregory of Tours in the 6th century. A true polyglot, it has traveled the world, thriving from New Zealand to California, Chile to South Africa. It takes many forms depending on the soil and climatic conditions.

Productive and demanding, Sauvignon requires an exceptional terroir to fully express its complexity. In the Cher Valley, we grow it on perruches (flint clay) and aubuis (the clay-limestone soils of the first slopes). Here, it unveils the full spectrum of its aromatic palette: tangy apple, boxwood, blackcurrant bud, flint, exotic fruits, white flowers, lychee, and more.

The Loire Valley is internationally renowned for its great Sauvignon Blanc wines, which can be fresh in their youth yet capable of refining beautifully after several years of aging in the cellar.

A Living Soil

Through photosynthesis, using solar energy, every plant absorbs carbon dioxide from the air and converts it into organic matter. When the plant dies and decomposes, it blends with the soil’s top layer to form organic matter in conjunction with microorganisms. This process stores carbon in the soil, reducing its presence in the atmosphere. Properly managed agricultural soils act as « carbon sinks ».

Organic matter is also the engine of fertility. It nourishes and provides a habitat for all the organisms that make soil vibrant and rich.

Moreover, soil covered with vegetation is more resilient than bare soil. Vegetative cover protects the soil from direct sunlight and excessive heat, enhances its water retention capacity, and makes it more resistant to drought. It also better withstands erosion during heavy rainfall and resists compaction.

Regenerative viticulture based on agronomy, pragmatic, and free from dogmatism, aims to increase the amount of organic matter in soils. While avoiding ploughing, we sow a diverse range of plants between the rows of vines. These plants coexist with the vines, forming permanent plant cover, with each contributing specific benefits to the system. The roots of one plant provide vertical channels in the soil, another has the ability to fix nitrogen from the air, and a third covers the soil to prevent it drying out in the summer heat…

This demanding agriculture, combined with the standards of Organic Farming, ensures the preservation of our terroirs and secures our future.

Our Domaine is also certified High Environmental Value (HVE).

Sauvignon blanc

 

The Touraine Sauvignon from LA CHAPINIÈRE has a pale golden color and an aromatic bouquet of stone fruits, white flowers, citrus, and acacia. On the palate, it strikes a perfect balance: the round texture is harmoniously complemented by the freshness of its lemony notes, granny smith apples, blackcurrant buds, and a hint of exotic fruits.

Decidedly cosmopolitan, this cuvée is a delightful companion to exotic dishes such as ceviche, scallops with lemongrass, ginger and coconut milk prawns, sushi… Yet, it also pairs perfectly with the region’s goat cheeses and Loire River fish.

Côt-Cabernet

 

Côt and Cabernet Franc are the two emblematic red grape varieties of Touraine.

Côt, also known as Malbec, grown in our Loire valley climate, expresses fresh aromas of violets and blackcurrants. It is ‘rounded’ by being blended with Cabernet Franc, which gives it finesse and complexity.

The Val de Cher, a must-see region for its Châteaux de la Loire … and Sauvignon Blanc. These two jewels interwine and resonate in Chenonceaux, the latest of Touraine’s remarkable denominations.

Winemakers of the Cher Valley carefully select plots overlooking the river, with specific exposures that enable optimal ripeness.

The resulting wines, much like the Château they are named after, embody the harmony between Nature shaped by the Cher river and culture steeped in centuries of history and unique architecture.

CÔT-CABERNET

 

This blend of Côt and Cabernet Franc benefits from the ideal exposure of our plots.

In great years, we reach the perfect concentration and ripeness of these two iconic grape varieties, resulting in wines that are full-bodied, complex, and suitable to be kept to age.

With aromas of ripe black fruits and spices, supported by a round and generous tannic structure, this wine is a distinguished choice for fine dining tables.

For making barrels in which wines were aged and stored, acacia was long ago abandoned in favor of oak.

However, beyond its ecological benefits—being a legume capable of fixing nitrogen from the air—acacia offers aromas of elderflower that pair nicely with those of Sauvignon. It was time to put ACACIA back in the spotlight.

A Sauvignon Blanc with a great aging potential, perfect for creating surprising and delightful food and wine pairings.
